Hand-crafted care: St Mary's first selects for smoking the very best Atlantic Salmon from the waters of the Bay of Fundy. Every step of the following process is then performed by local hands :
• Careful Dry Marination: Cold smoking requires careful dry marination which ensures uniform perfection: never salty, with just the right amount of cure to produce a silky texture.
• Oak Smoking: The smoke from oak wood shavings has long produced the preferred flavor for smoked salmon in Scotland.
• Temperature and timing of the smoking process over oak is gently controlled to create a mellow cold smoked salmon (low temperature) or the hearty oven smoked product (higher temperature), more traditional in Nova Scotia.
